In October 2010, Cara (Bolling) Thomas introduced Bolling?s Meat Market to the community.
But in becoming a popular restaurant and deli, there were hiccups along the way.
While Bolling?s was located at one of Iola?s busiest intersections, its small footprint pretty much eliminated any hope of expansion.
?Every time I expanded, I?d lose a parking spot,? Thomas said.
That has changed.
A few years back, Thomas acquired the H.L. Miller building to the west, in order to turn the old dress factory ? which had already been renovated into a restaurant ? into a formal event center.
The meat market?s crowded environs eventually convinced Bolling to aim even higher.
Cara (Bolling) Thomas moved Bolling?s Meat Market across the street to the old H.L. Miller building in order to create a food market that includes a restaurant and shopping center.
Over the past year, she began putting pieces into place to move her entire operation to 415 W. Madison Ave.
Monday marked the formal opening of Bolling?s Meatery and Eatery, complete with a meat market, deli, family restaurant area, coffee bar and lounge.
?I always had this vision of what I wanted,? she said. ?Finally, after eight years, I was able to do it.?
Thomas said her vision is akin to something a shopper would see in a metropolitan setting ? a mixed space of people shopping and eating. ?A food hall,? she noted.
Thomas has taken advantage of the old H.L. Miller building?s industrial style.
?It gives you some nostalgia, brought to life,? Thomas said.
THOMAS?S offerings begin with breakfast.
A grab-and-go breakfast is available with patrons given the option to eat on site if they want.
A nearby espresso machine provides a full variety of specialty coffee, cappuccino and lattes. A smoothie bar should appeal to those seeking healthier fare.
